CREAMY ASPARAGUS SOUP

There is something magical about the flavor and consistency of this soup. The flavor is so deep yet refreshing. Even if you’re not big on asparagus, I highly recommend this tasty blend. After all, my kids will even spoon this one up.  Creamy vegetable soups are a great way to get nutrients into picky eaters.

INGREDIENTS
  • 1 Tbsp coconut oil
  • 2 medium sweet onions, chopped
  • 2 lbs. asparagus, 2 inches of base removed
  • 3 large garlic cloves, chopped
  • 1 1/2 cups water*
  • 2 tsp sea salt
  • 1/4 tsp pepper
  • 1 cup coconut cream

DIRECTIONS
  1. Place the oil in a large pot over medium-high heat. Add the onions and saute for 3 minutes.
  2. Cut the asparagus spears in half and place in the pot along with the garlic. Saute for 4 more minutes or until the vegetables are barely tender and the onions are translucent. 
  3. Add the water, salt and pepper. Cover the pot and allow to simmer for 15 minutes.
  4. Transfer to a powerful blender, add the coconut cream and puree until smooth. ​​
  5. ​Freeze or refrigerate any leftovers.

*If you have broth available, especially if it is homemade, feel free to use it. You may however need to adjust the amount of salt in the recipe.
