The taste is on point, it’s gluten-free and you get the significant health benefits of fresh fish. Feel free to drizzle your finished product with melted ghee, balsamic vinegar, or of course ketchup for the 5 year old (in all of us).

INGREDIENTS
- 1/2 cup olive oil, divided
- 5-6 cod fillets
- 1 egg, whisked
- 1 1/2 cup shredded coconut, unsweetened
- 1/2 cup coconut flour
- 1/2 tsp garlic powder
- 1 tsp salt
- 1/4 tsp pepper
DIRECTIONS
- Preheat your oven to 400 degrees. Line a large baking sheet with parchment paper. Cut cod fillets in half lengthwise making them about 1-1.5 inch strips.
- Place cod in a 9 x 13 glass baking dish.
- Whisk the eggs in a small bowl. Pour this over the fish and roll the cod in it ensuring all sides are coated with the whisked eggs.
- In another small bowl combine the flour, shredded coconut, garlic powder, salt and pepper. Pour this over the cod and roll each strip in the mixture until the fish is completely coated on all sides.
- In a large skillet over medium-high heat, heat 1/4 cup of the oil. Place half of the cod in a single layer, turning once browned, about 1-2 minutes per side. Remove browned cod and place in a single layer on a baking sheet. Wipe off coconut flakes from pan and add remaining oil repeating the process until all fish is on the baking sheet. Place in the preheated oven for about 15 minutes or until the outside is crisp and cod is flakey.
