INGREDIENTS
- 1 Tbsp coconut oil
- 1 medium sweet onion, diced
- 3 cloves garlic, diced
- 1 inch ginger, peeled and diced
- 5 medium beets, peeled and cubed
- 4 cups vegetable broth
- 1/2 tsp salt (more if using low-sodium broth)
- 1/2 cup coconut cream
DIRECTIONS
- In a large pot melt the coconut oil over medium-high heat. Add the onion and saute for 3 minutes. Add the garlic and ginger, continue to saute for another 3 minutes stirring regularly.
- Add the beets, broth and salt. Bring to a boil then reduce heat to low, cover and simmer for 20 minutes or until the beets are very tender.
- Add the cooked soup to a powerful blender such as a Blendtec or Vitamix. Add the coconut milk and puree until completely smooth.
- Garnish with pepitas and fresh basil if desired.
