COCONUT BEET SOUP

COCONUT BEET SOUP

The color that beets provide is almost too good to eat. This creamy soup is surprisingly savory and so incredibly good for you. Beets provide powerful antioxidants and anti-inflammatory power. They are also an excellent source for folate which is necessary for cellular health.

INGREDIENTS
  • 1 Tbsp coconut oil
  • 1 medium sweet onion, diced
  • 3 cloves garlic, diced
  • 1 inch ginger, peeled and diced
  • 5 medium beets, peeled and cubed
  • 4 cups vegetable broth
  • 1/2 tsp salt (more if using low-sodium broth)
  • 1/2 cup coconut cream

DIRECTIONS
  1. In a large pot melt the coconut oil over medium-high heat. Add the onion and saute for 3 minutes. Add the garlic and ginger, continue to saute for another 3 minutes stirring regularly.
  2. Add the beets, broth and salt. Bring to a boil then reduce heat to low, cover and simmer for 20 minutes or until the beets are very tender.
  3. Add the cooked soup to a powerful blender such as a Blendtec or Vitamix. Add the coconut milk and puree until completely smooth.
  4. Garnish with pepitas and fresh basil if desired.
