CILANTRO MARINATED CHICKEN

It is my strong opinion that the best way to eat chicken is after it's been marinated! Marinades always make chicken so juicy and significantly better in flavor. I also usually split my chicken breasts horizontally before marinating  because I find this produces the most flavorful chicken.

This recipe makes a large batch which is good news because it is so delicious chopped up over a fresh salad or in a lettuce wrap for lunch the next day.

INGREDIENTS
  • 2 lbs chicken breasts, split horizontally

Marinade:
  • 1 Tbsp olive oil
  • 1 Tbsp honey
  • 1 lime, juiced
  • 1/2 cup cilantro, finely chopped
  • 4 cloves garlic, minced
  • 1/2 jalapeno, seeded and minced

DIRECTIONS
  1. Split each chicken breast horizontally. Place in a glass bowl.
  2. Whisk together the marinade ingredients in a small bowl. Pour over the chicken, cover and marinate in the refrigerator for at least 30 minutes up to overnight.
  3. Cook on high heat on a preheated grill for about 5 minutes per side.
