It is my strong opinion that the best way to eat chicken is after it's been marinated! Marinades always make chicken so juicy and significantly better in flavor. I also usually split my chicken breasts horizontally before marinating because I find this produces the most flavorful chicken.
This recipe makes a large batch which is good news because it is so delicious chopped up over a fresh salad or in a lettuce wrap for lunch the next day.

INGREDIENTS
- 2 lbs chicken breasts, split horizontally
Marinade:
- 1 Tbsp olive oil
- 1 Tbsp honey
- 1 lime, juiced
- 1/2 cup cilantro, finely chopped
- 4 cloves garlic, minced
- 1/2 jalapeno, seeded and minced
DIRECTIONS
- Split each chicken breast horizontally. Place in a glass bowl.
- Whisk together the marinade ingredients in a small bowl. Pour over the chicken, cover and marinate in the refrigerator for at least 30 minutes up to overnight.
- Cook on high heat on a preheated grill for about 5 minutes per side.
