BUFFALO ROAST CHICKEN

The flavor of this buffalo chicken is so savory with just the right amount of spice. Roasting a chicken is a great way to better ensure that the meat is tender and juicy. 

INGREDIENTS​
  • 1- 5lb. Whole chicken, gizzard removed
  • 1/2 Tbsp salt
  • 1/2 Tbsp celery seed
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
 
  • 1/2 onion, cubed
  • 1/2 tsp salt
  • 1/4 tsp black pepper
 
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp olive oil
  • 1/2 tsp cayenne
  • 1/2 tsp salt
  • 1/4 tsp paprika

DIRECTIONS
  1. Preheat your oven to 350 degrees. 
  2. Rinse the chicken inside and out then pat dry. Place in a 9 x 13 glass baking dish, breast-side down.
  3. In a small bowl combine the salt, celery seed, pepper and garlic powder. Rub the dry mixture over the entire chicken. 
  4. In the same small bowl toss the onion with the 1/2 tsp salt and 1/4 tsp pepper. Place the cubed onion inside the cavity of the chicken. 
  5. Whisk together the vinegar, olive oil, cayenne pepper, salt and paprika in the small bowl as well. Baste the entire chicken with the sauce. Place the chicken in the preheated oven. Baste with the sauce every 30 minutes. Cook for 90 minutes total. Pour the drippings from the pan over the plated chicken for added flavor.
