SANTA FE ROAST CHICKEN

This roast chicken is really outstanding with all of its subtle Santa Fe flavors coming through. It is also so tender, as only a roast chicken can be.

INGREDIENTS
  • 1-5 lb whole chicken, gizzards removed
 
  • 2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/4 tsp garlic powder
  • 1/2 tsp dried thyme
 
  • 1/2 large onion, quartered
  • 1/2 tsp salt
  • 1/4 tsp pepper
 
  • 2 bell peppers, sliced
  • 1 large onion, chopped

DIRECTIONS
  1. Preheat your oven for 350 degrees. 
  2. Rinse the chicken inside and out, pat dry. Place in a 9 x 13 glass baking dish, breast-side down.
  3. In a small bowl combine the spices. Rub the dry mixture over the entire chicken. 
  4. In the same small bowl toss the onion with the 1/2 tsp salt and 1/4 tsp pepper. Place the cubed onion inside the cavity of the chicken. 
  5. Place the prepared bell peppers and large chopped onion around the chicken in the pan.
  6. Place in the preheated oven. Baste the chicken with its natural juices from the bottom of the pan every 30 minutes. Cook for 90 minutes total. Pour the drippings from the pan over the plated dish for added flavor.
