BLUEBERRY DOUGHNUTS

These delicious little grain-free doughnuts really hit the spot. They make a wonderful addition to a light breakfast, treat, snack, or dessert.
Side note worth mentioning, my kids don't consistently like blueberry baked goods, but love these! 

INGREDIENTS
  • 2 eggs
  • 1/4 cup honey
  • 1/4 cup almond butter
  • 2 Tbsp coconut oil, melted
  • 1/2 cup coconut flour
  • 1 tsp baking soda
  • 3/4 cup blueberries

Icing:
  • 1/4 cup honey
  • 2 Tbsp nut butter (pictured is almond)
  • 2 Tbsp coconut oil, melted
  • 1 tsp lemon juice

DIRECTIONS
  1. Preheat your oven for 350 degrees. Generously grease a 6-cavity donut pan with coconut oil.
  2. With an electric mixer combine the eggs, honey and nut butter until smooth. Pour in the coconut oil and continue to mix. Add in the coconut flour and baking soda, mix until thoroughly combined. With a spatula, fold in the blueberries until disbursed through batter.
  3. Divide the batter evenly amongst the doughnut pan.
  4. Place in the preheated oven and bake for approximately 10 minutes or until golden around the edges. Remove from oven and allow to cool at room temperature for 5-10 minutes before turning out.
  5. Meanwhile, combine all icing ingredients in a small bowl and whisk until smooth. Drizzle over donuts and enjoy.
