BALSAMIC COD & ONIONS with SPINACH SIDE SALAD

Cod is such a mild tasting fish and pairs nicely with the powerful flavor of this vinaigrette, plus this recipe makes enough vinaigrette that you can enjoy it on a side spinach salad.

INGREDIENTS
  • 5 cod filets
  • 1 large yellow onion, sliced
  • 1 red bell pepper, sliced
  • Salt
  • Pepper 

Balsamic Vinaigrette:
  • 3/4 cup olive oil (light tasting)
  • 1/4 cup balsamic vinegar 
  • 3 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp honey
 
  • 5 oz. baby spinach 
  • slivered almonds
  • any desired salad toppings

DIRECTIONS
  1. Preheat your oven for 350 degrees.
  2. Place the vinaigrette ingredients in a powerful blender. Puree until smooth.
  3. In a large pan heat 1 Tbsp of the vinaigrette over medium high heat. Saute the onion and peppers until slightly tender, about 5 minutes.
  4. Arrange the cod in a 9 x 13 glass baking dish. Drizzle 2 Tbsp over the filets and sprinkle with salt and pepper. Top with sauted onions and bell peppers.
  5. Bake in the preheated oven for 25 minutes or until the fish is flakey. 
  6. Drizzle with more vinaigrette if desired and use the remaining vinaigrette to toss with spinach and serve as a side salad. Garnish the salad with slivered almonds and any other toppings you enjoy.
