INGREDIENTS
- 5 cod filets
- 1 large yellow onion, sliced
- 1 red bell pepper, sliced
- Salt
- Pepper
Balsamic Vinaigrette:
- 3/4 cup olive oil (light tasting)
- 1/4 cup balsamic vinegar
- 3 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp honey
- 5 oz. baby spinach
- slivered almonds
- any desired salad toppings
DIRECTIONS
- Preheat your oven for 350 degrees.
- Place the vinaigrette ingredients in a powerful blender. Puree until smooth.
- In a large pan heat 1 Tbsp of the vinaigrette over medium high heat. Saute the onion and peppers until slightly tender, about 5 minutes.
- Arrange the cod in a 9 x 13 glass baking dish. Drizzle 2 Tbsp over the filets and sprinkle with salt and pepper. Top with sauted onions and bell peppers.
- Bake in the preheated oven for 25 minutes or until the fish is flakey.
- Drizzle with more vinaigrette if desired and use the remaining vinaigrette to toss with spinach and serve as a side salad. Garnish the salad with slivered almonds and any other toppings you enjoy.
