BAKED PINEAPPLE CHICKEN

This dish is an absolute favorite. I mean, you really can’t go wrong with a pineapple and chicken combo.

INGREDIENTS
Sauce:
  • 1 Tbsp coconut oil
  • 1/4 cup coconut aminos
  • 2 Tbsp honey
  • 1 Tbsp apple cider vinegar
  • 1/4 tsp salt
  • 1/2 Tbsp coconut flour*
  • 2 cloves garlic, minced

  • 2 cups pineapple, cubed
  • 1 red bell pepper, chopped
  • 1/2 large yellow onion, chopped
  • 2 lbs chicken breasts

DIRECTIONS
  1. Preheat your oven to 400 degrees.
  2. In a medium saucepan over medium heat, whisk together the coconut oil, coconut aminos, honey, vinegar, garlic, salt and flour until simmering. Remove from heat.
  3. Add the pineapple, bell pepper and onion to the pot and toss to coat with the sauce. 
  4. Split the chicken breast in half horizontally and place in a 9 x 13 glass baking dish.
  5. Pour the sauce and fruit/veggie mix over the chicken evenly.
  6. Place in the preheated oven and bake for 20 minutes or until chicken is no longer pink in the center.

*Coconut flour will make sauce seem grainy at first. This will disappear in the oven.
