This dish is an absolute favorite. I mean, you really can’t go wrong with a pineapple and chicken combo.

INGREDIENTS
Sauce:
- 1 Tbsp coconut oil
- 1/4 cup coconut aminos
- 2 Tbsp honey
- 1 Tbsp apple cider vinegar
- 1/4 tsp salt
- 1/2 Tbsp coconut flour*
- 2 cloves garlic, minced
- 2 cups pineapple, cubed
- 1 red bell pepper, chopped
- 1/2 large yellow onion, chopped
- 2 lbs chicken breasts
DIRECTIONS
- Preheat your oven to 400 degrees.
- In a medium saucepan over medium heat, whisk together the coconut oil, coconut aminos, honey, vinegar, garlic, salt and flour until simmering. Remove from heat.
- Add the pineapple, bell pepper and onion to the pot and toss to coat with the sauce.
- Split the chicken breast in half horizontally and place in a 9 x 13 glass baking dish.
- Pour the sauce and fruit/veggie mix over the chicken evenly.
- Place in the preheated oven and bake for 20 minutes or until chicken is no longer pink in the center.
