BAKED CHOCOLATE DOUGHNUT HOLES

Who doesn’t love a bite-size bundle of chocolatey goodness?! These are so moist, chocolatey and can be garnished in so many different fun ways. 

INGREDIENTS

Doughnuts:
  • 3 eggs 
  • 1/4 cup applesauce
  • 1/3 cup honey
  • 1/3 cup coconut oil, melted
  • 1/2 cup cacao powder
  • 1/3 cup coconut flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1 tsp apple cider vinegar
  • (optional garnish: chopped pecans, coconut flakes, freeze dried fruit, etc.) ​

Chocolate Glaze:
  • 1 cup coconut cream
  • 2/3 cup cacao powder
  • 1/2 cup honey

DIRECTIONS
  1. Preheat your oven to 350 degrees. Liberally grease a 12-cup mini cupcake pan with coconut oil.
  2. With an electric mixer, combine the eggs, applesauce, honey, and oil. Once smooth mix in the cacao powder and coconut flour. Lastly, mix in the baking soda and vinegar until just combined. Allow the batter to sit for 10 minutes.
  3. Drop 1 Tbsp of batter into each cup. Place in the preheated oven for 10 minutes or until cooked through. Allow to cool for at least 5 minutes before turning out onto a cooling rack.
  4. For the chocolate glaze, whisk together the coconut cream, 2/3 cup cacao powder, and 1/2 cup honey in a medium saucepan over medium heat. Remove from heat once combined and warmed through, about 5 minutes. Set in the refrigerator until doughnuts are cooled to room temperature.
  5. Dip one half of each doughnut hole in the chocolate glaze then dip into garnish of choice.

Makes 24 doughnut holes.
