BAKED CHICKEN & ONIONS

Anything smothered in onions is alright by me. The flavor of this dish is absolutely delicious and the chicken turns out nice and juicy.

INGREDIENTS
  • 1 Tbsp olive oil
  • 1 large yellow onion, thinly sliced
  • 4 cloves garlic, minced

Sauce:
  • 2 Tbsp prepared mustard
  • 2 Tbsp honey
  • 1 Tbsp apple cider vinegar
  • 1 tsp salt
  • 1/4 red pepper flakes

  • 4 chicken breasts, split horizontally

DIRECTIONS​
  1. Preheat your oven to 400 degrees. 
  2. In a large saute pan heat the olive oil over medium-high heat. Add the onions and saute for 5 minutes. Add the garlic and saute for another 2 minutes.
  3. In a small bowl whisk together the mustard, honey, vinegar, salt and pepper flakes.
  4. In a 9 x 13 glass baking dish, arrange the sliced chicken breasts in a single layer. Pour the prepared sauce over the chicken and top with the onions and garlic.
  5. Place in the preheated oven for 20 minutes.
