BAKED ITALIAN CHICKEN

Not only is this baked chicken delish, it will make your house smell like you're holdin' it down at dinner time.
This chicken is juicy, tender, and has so much savory flavor, but most importantly it's simple and quick.
I prefer using half ghee and half olive oil simply because they both have different beneficial health properties, plus I like the balance of flavor you get by using both as opposed to just one. However, you could use all of one or the other if desired.

INGREDIENTS
  • 2 lbs chicken breasts, sliced into cutlets
  • 1 Tbsp ghee, melted (or olive oil for dairy free)
  • 1 Tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup coconut flour
  • 1 1/2 Tbsp Italian seasoning
  • 1 tsp salt

DIRECTIONS
  1. Preheat your oven to 425 degrees. Place the chicken in a 9 x 13 glass baking dish.
  2. In a small bowl whisk together the melted ghee, olive oil and garlic. Pour over the chicken and toss to coat. 
  3. In a separate medium sized bowl combine the coconut flour, Italian seasoning and salt. Dip each chicken breast into the flour mixture to coat. Lay the breasts in a single layer on the glass dish.
  4. Place in the oven and bake for 20 minutes.
