BAKED BALSAMIC CHICKEN

This dish has a bold flavor and is of course delicious with a side of colorful roasted balsamic veggies.

INGREDIENTS
  • 2 lbs. chicken breast

Vinaigrette:
  • 1/4 cup balsamic vinegar
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp honey
  • 1/2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/4 tsp pepper

DIRECTIONS
  1. Preheat your oven for 400 degrees.
  2. Split chicken breasts horizontally and place in a 9 x 13 glass baking dish.*
  3. Whisk together the vinaigrette ingredients and pour over the chicken breasts.** Cover and allow to marinate in the refrigerator for 30 minutes.
  4. Bake in the preheated oven for 20 minutes or until no longer pink in the center.

*Splitting the breasts is optional but ensures the best possible flavor and quickest cook time.
**You can reserve 1-2 Tbsp for some sautéed veggies if desired.
