I love making pancakes with a pecan base. I find that they generally hold together better than using just coconut flour plus the pecans give them a nice flavor.
These pancakes are extra awesome because you can make them all in the blender for added ease.
Like many grain-free pancakes, these remain more moist than traditional flour pancakes which you may find you enjoy more.
For some flavor variety feel free to sub out the applesauce for 1 ripe banana.

INGREDIENTS
Pancakes
- 1 cup pecans
- 1 cup applesauce
- 4 eggs
- 2 Tbsp coconut oil, melted
- 4 Tbsp coconut flour
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp baking soda
Cinnamon Apples
- 2 Tbsp coconut oil
- 4 honeycrisp apples, peeled, cored and cubed
- 2 Tbsp honey
- 1 tsp cinnamon
DIRECTIONS
- Preheat a large griddle for 275 degrees.
- In a powerful blender, process the pecans for about 10 seconds or until they are fine and crumbly. Add the remaining ingredients to the blender and mix until combined and smooth.
- Pour the batter into 3-inch circles, making 6 equal pancakes.
- Cook for about 7 minutes on the first side or until pancakes are solid enough to flip with a spatula. Cook an additional 3 minutes on the second side. Repeat for the remaining batter.
- Serve hot and garnish with warm honey, pure maple syrup, chopped nuts or fresh fruit.
- For the Cinnamon Apples, melt the oil in a medium-sized pan over medium-high heat. Add in the apples, honey and cinnamon. Saute for 5 minutes or until the apples are cooked to desired tenderness.
- Makes 12-3 inch pancakes.
