I love anything that I can put in a blender. This makes it so simply and speedy to make. These muffins bake up beautifully. The crumble topping adds an exciting element but can also be omitted to switch up. Feel free to add pecans or walnuts into the batter too.
INGREDIENTS
Muffins:
- 3 ripe bananas
- 3 eggs
- 1 tsp cinnamon
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 3 cups almond flour
Crumble:
- 2 Tbsp coconut oil
- 1/4 cup pecans
- 1/4 coconut flakes
- 1/4 cup almond flour
- 1/4 cup coconut sugar
- 1/4 tsp cinnamon
- Dash of salt
DIRECTIONS
- Preheat your oven to 350 degrees. Line a standard muffin tin with 12 paper liners.
- In a powerful blender, add bananas, eggs, cinnamon, baking soda, baking powder, and salt. Blend until smooth.
- Add the almond flour and process until just combined. Pause and scrape the walls of the blender and process for a few seconds more.
- Divide the batter between the 12 muffin liners.
- In a separate small glass bowl, combine all crumble ingredients. Sprinkle evenly over the muffins.
- Bake in the preheated oven for 30 minutes or until aromatic and golden.
