ALMOND FLOUR BANANA BREAD

Almond Flour Banana Bread

Serves: 6

This banana bread is so moist and full of flavor. It's great to have on hand as a quick breakfast or a satisfying bedtime snack.


INGREDIENTS

Muffins:
  • 3 ripe bananas
  • 3 eggs
  • 1/4 cup honey
  • 1/4 cup coconut oil, melted
  • 3 cups almond flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder (aluminum-free)
  • 1/4 tsp sea salt
  • 1/2 cup slivered almonds (optional)

DIRECTIONS
  1. Preheat your oven to 350 degrees. Line a 9 x 5 loaf pan with parchment paper.  tin with 10 paper liners. 
  2. In a large mixing bowl, add the bananas and mash with a masher.
  3. Add in the eggs, honey, coconut oil, cinnamon, baking soda, baking powder and salt. Mix until combined.
  4. Add the almond flour and stir until well combined.
  5. Pour the batter into your prepared pan. Optional step, sprinkle slivered almonds over the top of bread for crunch. Bake for 50 minutes in the preheated oven. Afterward, turn off the oven and allow the bread to sit in the hot oven for 10 more minutes. 
  6. Remove the banana bread from the oven and allow to cool for 10 minutes.
  7. Serve hot or cold with an extra drizzle of honey.
