INGREDIENTS
- 1/4 cup ghee
- 2 eggs
- 2 cloves garlic, minced
- 3/4 cup almond flour
- 1 tsp dried parsley
- 1 tsp salt
- 1/4 tsp pepper
- 6 cod fillets
DIRECTIONS
- Preheat your oven for 400 degrees.
- Put ghee in a glass 9 x 13 baking dish. Place in the oven to melt while preparing the fish.
- Whisk the eggs and garlic together in a bowl, set aside.
- Combine the almond flour and spices in a shallow dish.
- Dip each cod fillet in the eggs then press each side in the the flour mixture.
- Remove the glass dish from the oven and turn the floured cod in the melted ghee to coat all sides. Bake for 15 minutes or until the fish becomes flakey.
