Are you aware that ghee is unlike most dairy products? There is research that supports health benefits associated with ghee such as anti-inflammation, digestive support, better nutrient content, heart health, and several others. Not to mention ghee has very little, if any lactose in it making it tolerable to many individuals with dairy intolerance.

The ghee in this recipe elevates the fish to a whole new level of flavor and decadence thus is highly recommended over olive oil in this recipe if available.

INGREDIENTS
  • 1/4 cup ghee
  • 2 eggs
  • 2 cloves garlic, minced
  • 3/4 cup almond flour
  • 1 tsp dried parsley
  • 1 tsp salt
  • 1/4 tsp pepper
  • 6 cod fillets

DIRECTIONS
  1. Preheat your oven for 400 degrees.
  2. Put ghee in a glass 9 x 13 baking dish. Place in the oven to melt while preparing the fish.
  3. Whisk the eggs and garlic together in a bowl, set aside.
  4. Combine the almond flour and spices in a shallow dish.
  5. Dip each cod fillet in the eggs then press each side in the the flour mixture.
  6. Remove the glass dish from the oven and turn the floured cod in the melted ghee to coat all sides. Bake for 15 minutes or until the fish becomes flakey.
