ALMOND BUTTER CARAMELS

These caramels are so simple to make and sacrifice no flavor. They also store well thus are perfect for an on-hand treat and gift-giving!

INGREDIENTS
  • 3/4 cup honey
  • 3 Tbsp coconut oil
  • 1 cup almond butter
  • 1/4 tsp salt
  • Flaked sea salt

DIRECTIONS
  1. Line an 8x8 pan with parchment paper.
  2. In a medium-sized pot over medium-high heat, bring the honey and oil to boil. Immediately reduce heat to low and simmer for 15 minutes, stirring occasionally. 
  3. Remove from heat and mix in the almond butter and 1/4 tsp of salt with an electric mixer. Pour the mixture into the prepared pan. Spread evenly and sprinkle with flaked sea salt.
  4. Place in the refrigerator for 15 minutes or until caramels are set well enough to cut and hold their shape. Cut into small desired shapes and sizes.
  5. Store in an airtight container at room temperature.
